A Primal Snack More Addictive Than Crack!

Ok, well maybe that is an exaggeration because I hear that crack is indeed pretty addictive. And also it is pretty unhealthy for you where as this is perfectly primal but anyways…

… I give you Crackling!

Roger de Rok introduced me to this stuff and I can’t put it down. They have it available made fresh at our local Mexican Mercado style “Ranch Market” (it’s pretty much a big grocery store where everything is in Spanish and has really cool exotic foods).

So what is it?

My understanding is that Crackling is what is left over after rendering lard. Picture a pork rhine with a pad of butter stuck to the underside. That is crackling.

How is it primal?

It is pork fat… fried in its own pork fat. All natural, deliciously fatty and ready to go.

Crackling makes a truly awesome, truly primal snack. It is the perfect primal substitute for chips or popcorn. It is easy and delicious to eat straight by itself but I am absolutely dying to make some nachos or primal frito pie with it.

If you can’t find Crackling then pork rhines still make a pretty good primal snack by themselves but Crackling is the way to go!

Are you familiar with Crackling? Do you love this stuff as much as I do?

Do you ever miss yourself a good breakfast sandwich?Yummy bacon and pork sausage and egg with a gooey runny yolk. All able to be eaten without a fork? Well here is an option for you. The Sausage egg and bacon McSoG.

These turned out tasty AND filling… almost too filling lol.

Ingredients:
SoG Coconut Griddle Cakes
- 1 cup finely ground unsweetened coconut. Easy to make by throwing shredded coconut in a food processor.
- 1 egg

Sandwich Fodder:
- Bacon
- Sausage patties
- Eggs any way you want em. I like fried.
- Or any other of your favorite breakfast foods

Directions:
1. First you will need to make the Coconut griddle cakes. These can be eaten on their own like pancakes but warning: they tend to be a little dry (great with butter and fruit though!). Mix the fine coconut and the egg together in your bowl. This will give you a nice batter. Cook on the stove in a little bit of evoo like pancakes. See picture below.

2. Next, cook up your innards. Pretty self explanitory on the bacon and sausage. Cook the eggs however you like em. See picture below.

3. Stack it in a sandwich. See picture below.

4. Enjoy your pile of deliciousness!

These are easy to make and kick the crap out of McDonalds breakfast any day!

Wow, this dinner was absolutely amazing! It was so easy too that it is almost criminal. I am going to put myself out of a job posting easy recipes like this. Anyways, here is a quick easy and to die for meal form your crockpot that I know you all pulled out after reading this post.

Ingredients:

1 large Pork butt

1 can (8 oz) of El Pato Mexican hot sauce. Or make your own, it is basically just tomato puree, water, chiles, garlic and onions.

Directions:

1. Put the pork butt in your crockpot/slow cooker.

2. Pour the sauce over it.

3. Leave in the crockpot on low to medium for 20-24 hours.

4. Using tongs, pull the pork apart and stir in the cooker. It should fall apart almost on its own. (if your pork is not flavorful enough for you at this point, you can add a little extra garlic, onion or salt).

5. Serve and enjoy!

This is absolutely delicious with a little bit of your homemade guacamole!
