Do you ever miss yourself a good breakfast sandwich?Yummy bacon and pork sausage and egg with a gooey runny yolk. All able to be eaten without a fork? Well here is an option for you. The Sausage egg and bacon McSoG.
These turned out tasty AND filling… almost too filling lol.
Ingredients:
SoG Coconut Griddle Cakes
- 1 cup finely ground unsweetened coconut. Easy to make by throwing shredded coconut in a food processor.
- 1 egg
Sandwich Fodder:
- Bacon
- Sausage patties
- Eggs any way you want em. I like fried.
- Or any other of your favorite breakfast foods
Directions:
1. First you will need to make the Coconut griddle cakes. These can be eaten on their own like pancakes but warning: they tend to be a little dry (great with butter and fruit though!). Mix the fine coconut and the egg together in your bowl. This will give you a nice batter. Cook on the stove in a little bit of evoo like pancakes. See picture below.
2. Next, cook up your innards. Pretty self explanitory on the bacon and sausage. Cook the eggs however you like em. See picture below.
3. Stack it in a sandwich. See picture below.
4. Enjoy your pile of deliciousness!
These are easy to make and kick the crap out of McDonalds breakfast any day!

This is awesome! It’s also very timely – my cravings for a breakfast sandwich had gotten bad enough that today I had one of these with actual bread.
I’ll have to give this a try. Ideally with avocado smeared on it like dressing.

That runny egg yolk looks like it is a nice tasty dark orange color. I love runny egg yolks!
Seriously – this looks awesome. And it never occurred to me to make my own coconut flour from unsweetened coconut (duh). Thanks for that tip.
What’s the texture like on the griddle cakes? Light and fluffy? A bit dense? Biscuit-like?

Nothing wrong with using butter instead. The texture is very much like a real pancake… a little more firm and they are a little dry (easily fixed with butter). I prefer to pulse my own coconut over buying coconut flour because most coconut flour… is de-fatted. Why not use full fat coconut? I always try to get the darkest yolk eggs that i can find

Wow that was spot on! I love a good runny bright orange egg yolk. I hated the white part as a kid, and to be honest I still don’t like it. But fried it is at least tolerable. Just got a couple dozen eggs from the farm when I picked up my 1/4 side of beef (I tried not to make a whole lot of eye contact with the cows as a drove past) and some nitrite free bacon. She has great eggs… really dark orange yolks and good and runny. I haven’t tried doing anything with coconut, but this looks like it’s worth a try. Because egg yolk demands sopping up!

Grok certainly cracked some coconuts. Probably right from the time he spread to the pacific or trpoic areas. The coconut contains almost everything a healthy grok needs. I imagine he probably trew them at birds occasionally as a hunting tool though too

SoG — Made these last night when I got back from a party where I’d been surrounded by junk and alcohol. I see what you mean, I used 2 eggs to a quarter cup of coconut flour and still had to add a little milk. Very dry like you said, but tasty when fully constructed!
(I’ve been thinking lately eggs are probably more ‘paleo’ than anything derived from milk products — we were probably stealing eggs from animals long before we ever domesticated them, que no?)

Eggs should not be mistakenly included in the same category as “dairy” like conventional wisdom has been doing for years. Eggs are about as primal as it gets. Grok most certainly was grubbing raw eggs very early on. As far as primal foods go, eggs are incredible and edible… they are awesome.

Just found your blog via Mark’s Daily Apple and your comment on the Twitter phenom. I have to agree; I’ve never twittered but I did Facebook for a while. But I gave it up and haven’t looked back. I figure blogging and reading blogs is enough for me. Besides, I have a really hard time believing everyone really wants to know when I’m folding laundry.
Hubby and I are getting ready to start eating “primal” this Thursday, and this looks so yummy! I have a question–do the coconut pancakes taste like coconut? I haven’t acquired a taste for it just yet, though I know it’s good stuff.

Looks good, but one thing I just can’t grasp is how in the world is bacon any good for you? I know you can get it without sodium nitrite, but I just can’t help but associate bacon with unhealthy.

I think part of the dogma around bacon is because it tastes SO good. We have this ingrained hing in our brain that healthy food can’t taste good. Also we have been taught that fat is evil… and bacon is chock full of delicious fat. Plus companies do ruin healthy bacon with tons of sugar and chemicals. Still, get sugar and chemical free bacon and live up the deliciousness!

My kids went ape over these. Since they already had breakfast, I only made one sandwich for myself which I let them try. I thought for sure they’d hate it but they didn’t. Instead they begged me to make them one later in the week! Yeah for grok! Now, I can’t wait to try some of the cookie recipes on them.
Although, these were a great option to grain based pancakes, you can definitely taste the coconut. So if that’s a problem, just use other nut or seed flours. I added almond meal, and flax meal to offset the coconut (my dd hates coconut and refused to eat these but my finicky boys were all over them). Next year when do our acorn and nut harvesting, I plan on making these with acorn flour and hickory flour. I’m going to try other wild edible flours as well!

So I attempted to make some of those delicious looking griddle cakes….and failed massively. I took some coconut flour and an egg, and ended up with damp coconut flour and nothing else. Certainly not a batter. I bought the coconut flour from Whole Foods. Did you do it from a whole coconut? Do I need to add water or something that is lost somewhere between coconut and coconut flour?
I have been sitting at work craving them with a nice slab of butter on top, but I need to know where I went wrong….because I can’t see what I missed.

I don’t use real “coconut flour”. I just pulse shredded coconut in the food processor. Coconut flour has actually been de-fatted which may be your problem.

Wow, these are so good and easy to make. Just had them for breakfast 20 minutes ago. I love my coconut.
. Something to try is adding a little bit of coconut milk and cooking them in coconut oil, that is, if you like coconut.

Just made these, they are great. I made mine with 2 eggs and 1 c. coconut. Turned out yummy. I also used sausage instead of bacon. They were surprisingly delicious and not too dry. Maybe a bit too filling as mentioned. Thanks for the great recipe. I think my hubby will even like these too. Thank GOD for coconut!

So my younger bro mixed up some of the coconut batter today and planned to make it tomorrow….I was planning on making some quiche and we used some of the coconut as the crust for that. If you bake it, it gets a nice crunchy texture…still a little dry but nothing a little butter can’t cure easily!
