Time for… Cheesecake!

I have been playing around with trying to make a cheesecake for a while now.I was well on my way along the right track but reader Tim e-mailed me a cheesecake recipe that quickly skyrocketed me to success. This is largely that recipe he e-mailed me but minus the splenda and plus the berries. I like my sweet additions natural. ;-)

This recipe is very heavy on dairy.Which makes sense cause how could you make a “cheese”cake without dairy lol. Anyways, that means this recipe is not Primal per say but is pretty darn healthy IMO. No added sugar and no artificial sweetener. Mostly just good fat and deliciousness. Even our guests (chronic sugar eaters) enjoyed it!

Ingredients: (Note: remember that organic DOES matter when it comes to dairy)
Crust:
1+ cup of almond flour
3 tblspn organic butter OR Coconut oil
1 teaspoon cinnamon
Filling:
Approx 2 cups or 10 Large Strawberries. I used the frozen kind
2 8oz. packages organic cream cheese
2 dollops organic sour cream
1 teaspoon vanilla
3 eggs

Directions:
Crust:

1. Melt the butter or coconut oil in a large bowl.
2. Add cinnamon
3. Add almond flour and mix until you get a good crumbly consistency. This should take a little more than a cup of almond flour.
4. Press very thinly into your pie pan. A sprigform pan is recommended but not necessary. As you can see from my picture, I used a regular pie thingamabob

Filling:
1. Add all ingredients in a large mixing bowl.
2. Use a mixer or a hand mixer and beat until smooth
3. Pour mixture into your pan over your crust

Bake:
1. Preheat oven to 400 degrees
2. Put cheesecake in the oven
3. After about 5 minutes, turn the oven temperature down to 200 degrees. This will allow the cheesecake to bake while slowly cooling.
4. Chck cheesecake periodically after 60 minutes. Mine took about 90 minutes to cook. The cheesecake should appear firm on top all the way to the center.

Serve and enjoy:
1. Cool cheesecake and place in the refrigerator to further cool.
2. Once cooled, cut and serve.
3. Enjoy delicious strawberry cheesecake!

This is really quite good. I used strawberries as my “sweetener” but i think that other berry would work very well too. You could try blueberries or blackberries!

    i was wondering how much fat or weight have you lost,you really look great your an insperation,i on the other hand am stuck at 320 the fattest i ever have been, my mind gets so clogged with the bullshit out their i am lost.I did atkins for five days and lost 0 pounds just a little water weight it seems hopeless.I had to buy new cloths for a meeting my wife has this week i had to go to the big and tall shop the pants are a 50 inch waist and the shirt is a 4x just so its long enough to cover my belly.Being obese is the worst thing i have ever delt with.Sometimes i just pray i dont wake up in the morning but its not my call.Sorry to be a downer just feeling really down after shopping.Any tips?

    Bill,
    All in all I have lost about 60 pounds. The best thing about it is there is nothing special about me! I am just a regular joe. It sounds like you are getting way more down on yourself than you should! There is a ton of bs out there just as you say and its really hard not to get wrapped up in. My best advice for anyone is to forget over analyzing every little thing and focus on a few healthy key principles then expand from there. If you try too much at once you can experience “Paralysis by analysis” which i talk about here:

    My recommendations.
    Nutrition: Start small – Work on not eating or drinking anything that has refined sugar, high fructose corn syrup, honey, artificial sweetener or any kind of sweetener in it. If you want something sweet, have some fruit (preferably berries). Read the ingredients on everything you eat, you will be amazed at what they will put sugar in. AFTER you have this pretty well down THEN start working on the next thing which would be not eating anything with grains (this includes corn!). THEN you can further tighten your diet from there. But start simply with no sweeteners. Focus on eating meat, vegetables and fruit.

    Exercise. Get some kind of exercise consistantly. I recommend a 30 minute to one hour walk at least 5 days per week. Not only is it good low level cardio exersice but it is great for the mood and emotional health. Once you have this down and are comfortable you can start throwing in a strength workout for 30 minutes once a week, then twice a week and then 3 times a week (no more than 3X per week is really ever necessary).

    The real key is not to get stressed in trying to do everything right or perfect at once. This easily leads to a feeling of confusion and desperation! Feel free to e-mail me for any specific questions you come across or if you start feeling overwhelmed. sog@sonofgrok.com

    It’s true. SoG has been a huge help to me. I’ve lost about 40 pounds in the last 2 1/2 months. I started at 305 which is only 4 pounds less than the heaviest I’ve ever been.

    Any thoughts on a regular plain cheescake flavor? Everything tastes too sweet to me anymore, even some fruits. Had a clementine today with a co-worker and man it was so sweet. Strawberries could work though.

    For a plain cheesecake, I would use some lemon juice and lemon zest. You would still probably need SOME kind of sweetness though. Maybe some shredded coconut or some coconut milk?

    See, I would love to use organic milk, but I make kefir with mine and I can’t find organic milk that’s not ultra-pasteurized. Pasteurized is bad enough; get ultra and you might as well be drinking liquid chalk for all the nutrition that’s left in the stuff. The kefir grains sure don’t seem to like it. So unfortunately I use conventional milk.

    While I use yogurt and cream cheese and sour cream occasionally, I don’t ever use milk. Maybe I would use raw milk if it were available… but i just don’t have any craving or desire to use plain pasturized milk.
