Recipe: Stuffed Peppers

There is more than one way to stuff a pepper. This is one way though. :-)

I really enjoy stuffed peppers. We used green pepper here (though I tend to prefer red). For more mild and traditional stuffed peppers, you want to generally use bell peppers but don’t let this limit your creativity… you can stuff almost any kind of pepper you wish!

Ingredients:
- 4 bell peppers
- 1 pound ground meat (we used grassfed beef)
- Grated cauliflower. Just take a head of cauliflower and run it on a cheese grater. Makes a great “rice” textured veggie.
- Onion
- Salsa
- Zucchini

Directions:
1. Start by cutting the tops out of your peppers. Then scoop out the insides so you have basically “bowls” mad out of peppers.
2. Brown your meat in a skillet and stir fry it with all of your veggies. Also add the salsa and this point to season everything.

3. Stuff your meat and veggies mixture into your peppers. Stuff them good and full.
4. Bake stuffed peppers in the oven at 350 degrees for 30-45 minutes.
5. Top with guacamole and serve! Also good with some organic sour cream for you that eat dairy.
6. Enjoy.

Feel free to mix and match your own recipe. Try different toppings and seasonings! This is another easy yet delicious one.

    Grated cauliflower is awesome. My wife and I have even made “fried rice” with it instead of rice and it is awesome!

    I can vouch for the grated cauliflower. I stole the base idea off of one of MD Eades recipes. But I cut in chunk and pulse in my food processor. Quick. Then sautee it with some butter salt and pepper. Actually kind of brown it. My wife loves it.

    Served it with pepper steak actually. Though its really a tomato based pepper steak.

    Thanks for this SoG. Here in Bulgaria we have this recipe for stuffed peppers, but it is with rice and ground beef. So yeah, thanks for giving me an idea how to make it primal.

    Oh I LOVE stuffed peppers. We cook up our grass-fed ground beef stuffing like taco meat, though, instead of using salsa.

    That translates into added garlic, LOTS of cumin, some chipotle chili powder, salt, a touch of coriander, and about 8oz of tomato sauce per lb. of meat.

    The salsa is probably easier, but there’s nothing like this when I get a hankerin’ for tacos!

    Made this today! My first meal back on “Planet Earth” after a 4 day business trip of airport, hotel and conference foods. Fantastic! The shredded cauliflower will become a staple in many dishes.
