These are good. Great warm. I used a blender. Almond meal (same amt), and I coursely chopped the peaches. Sprinkled the finished cookie with Sun Crystals. Worked well. Add a light coat of non stick spray to bake pan.

These look so yummy, SoG! I linked to your post, citing these Peach Patties as a "primal recipe." Wherever do you find those dried peaches? I checked Whole Foods, but may have missed 'em. Btw, if you want them to be less bread-y, just use the yolk and a saturated fat like coconut oil. ;) Will be trying these when I can find the peaches!

A few modifications, I made mine with hazelnuts, dried cherries, a tsp of cocoa and 1 tbsp of (gasp) honey. I made these to take to Whistler today, and they were awesome. This will definitely be a new staple in my hiking/skiing food plan.

Next, I'm thinking of trying peaches, macadamia nuts, and nutmeg...

Gina,
You can certainly use almond meal here. I would reduce the quantity though... otherwise they may end up a little hard or dry!
