Egg salad is an absolutely delicious way to get a primal meal in. It also happens to be one of the absolute easiest things you can make. I have my wife addicted to it so we have this almost on a daily around here.
Ingredients:
-6 Hardboiled eggs
-3 tablespoons Mayonnaise. Extra kudos if you make your own. Here is a great mayonnaise recipe courtesy my good web buddy Marc at Feel Good Eating!
- 1-2 tablespoons Mustard. Almost any kind will do. I tend to prefer deli mustard because of the big seeds but dijon or any other works fine.
Optional Ingredients:
Onions
Celery
Paprika
Anything that strikes your fancy
Instructions:
1. Peel shells off of hardboiled eggs and place eggs in a large bowl.
2. Using a fork, smask the eggs into pieces. You want it to be somewhat chunky so don’t over smash!
3. Add mayonnaise and mustard to eggs and mix well. Mayonnaise can be adjusted to preference (less for drier egg salad and more for pastier). I tend to eyeball it. Mustard can also be adjusted (less for blander or more for tangier). Again, I tend to eyeball it.
4. (OPTIONAL) I usually skip this part as i enjoy plain egg salad. Add in other features such as chopped celery or onions. A little bit of Paprika is also pretty darn good in egg salad.
5. Enjoy!
See? SO easy.No excuse not to treat yourself and give this one a try. This can easily be thrown in a Tupperware and stored in the fridge or taken with you as well.

Deviled eggs are almost the same thing. Just cut the eggs in half and then mix up the yolks, mayonnaise and mustard together (and copped onions if you like). Spoon the mush back into the eggs where the yolks used to be and top with a dash of paprika!

Only 7 more than me! Have to say, eggs are an absolute godsend – I’d never have breakfast otherwise.
Primal breakfasts are a real struggle for me, it’s eggs or nothing. I recall there being a primal breakfast suggestions post at MDA but it mostly involved dairy :/

I’ve been eating tons of boiled eggs lately, this will definitely make them more exciting. My daughter is also way into them now. Deviled eggs rule!

You are my kinda egg guy. Scrambled is probably my least favorite style, because I am a YOLK girl through and through. Fried over easy or poached. Or soft boiled (except I’m too incompetent to do this, so I only get them on European breakfast bars where they always have them).
I love deviled eggs. I need to figure out a good replacement for Marzetti Slaw Dressing (the secret to great deviled eggs)… it’s gotta a lot of crap in it. Dijon mustard is good too… and the country style has the grainy mustard seeds in it.
Dill is a good idea.

Love eggs. Wife not as much but she does eat most of what I make with them. When I make deviled eggs or egg salad its never the same. Can never remember what I put in it the last time. Always good, though.
I like the yolks not cooked all the way also. Taste much better. I think the key to scrambled eggs is not to overcook them or over-scramble them. You should not think there ready to eat when you take them out of them pan. I also mix a tad of heavy cream in.
Dr. Eades had a great breakfast I like. Soft boiled eggs in a bowl with butter, salt and pepper. Break the eggs up into chunks and mix all together. Its great. He has a post on it somewhere with the blowing the egg out of the shell trick video.
SoG, quiche used to be my breakfast every weekday. I’ve changed for now and will eventually go back.

Good for you because real men aren’t afraid of a little quiche! Lol I have a slice of quiche several days a week. I too like when the yolkas are not fully cooked sometimes too. I really dislike when they are overcooked.

Fennel is a delicious addition to egg salad. Its a strong flavor so you only need half a bulb or so. such a great combo.
