Eggs are good, fats and meats are good, vegetables are good…. what better way to get all of them than combined in a healthy, delicious quiche?
Quiche is SO easy to make and it is delicious. I threw this quiche together real quick as a non-dairy recipe (for those anti-dairy of you) just to make sure it would work and it did swimmingly. This turned out better than the picture shows. I just had like 30 seconds to snap a pic with my cell phone before I ran out the door to work this morning. I had this slice sitting in the fridge waiting as a snack.
Ingredients:
10 eggs
1 can coconut milk (Using coconut milk adds a little “sweetness” to the quiche. Traditional quiche usually uses half & half or milk)
Fillins (Optional) You can make a Quiche with just the milk and eggs but fillins really add a lot. Try onions,bell peppers, spinach, bacon (cook first), ground meat (cook first) or pretty much anything else you want to try. Cheese is awesome in a quiche if you don’t mind the dairy!
Instructions:
1. Preheat oven to 375 degrees
2. Mix eggs and coconut milk in a large mixing bowl. A hand mixer or a whisk works great for this.
3. Stir in your fillins. Cook any meats prior to adding. Make sure everything is mixed up well
4. Pour into a baking tin. I use a pie tin myself but any baking pan will work.
5. Bake in oven for approximately 30-35 minutes at 375 degrees. The quiche will kind of balloon up like a muffin top (it looks really cool) but will shrink back down as it cools so do not be alarmed.
6. Let cool and Enjoy
Yes, it really is that easy! Now you can amaze your friends and family with gourmet quiche right from your kitchen. No excuses not to cook for yourself with this one.

Always made my quiches with heavy cream for years for breakfast. Lately I have been sauteed up some diced chicken thighs, cinnamon (I’ve been on a kick lately), five spice and coconut oil ahead of time and reheat for breakfast. Maybe I’ll try the quiche again with with coconut milk.

No crust needed. If you want a crust, it is pretty easy to make. Mix an egg and a tablespoon of evo (double ingredients if you have a big pan) with almond flour until you get a good “doughy” consistencey. Put the crust in the pan first and bake it about 10 mintutes at 350 (by itself). Then follow the instructions as normal!

I haven’t quite figured that part out yet I use some pretty darn good non stick pans which work well but sometimes it still sticks a little (nothing too bad). If you have a pyrex baking dish, I imagine that sticks less too.

I have started using a little less coconut milk in the quiche and I think it turns out better to my taste. I use half a can now. I hope you enjoy!

Great recipe! We make fritattas pretty often, but I liked the addition of the coconut milk. Also, the cooking was much easier than most recipes! We added fresh sage, zuchini, sweet red pepper, and local sausage. Yummy!!
Only 1 piece of left overs (3 adults and 2 kids for supper). DH (darling hubbie) and I will be fighting over it for a snack tomorrow!!

I’ve got some turkey sausage made up, so I’ll crumble that in there, maybe throw in some spinach, asparagus, & herbs. Unless I report back later w/ a warning, assume it was tasty.

No warning – it came out great.
I used an almond crust (1.5 cups ground-up almonds, ~4T butter), along w/ spinach, tomato, turkey sausage, and onion (+ salt, pepper, and a little basil). It was tasty.
Next time: more herbs!
